The Best Bacon Wrapped Hot Dogs Ever!

We have been going to the same Independence Day Party in our Laguna West-Lakeside neighborhood for years.  The day starts with a neighborhood softball game with tasty treats, then moves to our friend's house for kayak racing, cooling off in the pool, fireworks and FOOD!  Every year our family debates what we will bring for the grill.  Usually, it is tri-tip, steak or chicken.  This year, I went outside the box with hot dogs.  Now, this did not go over too well in my household.  I have a certain reputation to uphold, but then I told them about the bacon.  Bacon makes everything better!  Oh, and there would be smoked corn salsa and homemade pimento cheese for toppings.  Thankfully, the family was appeased.

     I started the day before the party by roasting the corn and jalapenos on the BBQ.

     The day of the party, I was up early making the pimento cheese and the smoked corn salsa.

The Pimento Cheese comes from, "Rodney Scott's World of BBQ."  He is the pitmaster and owner of Rodney Scott's BBQ in Charleston.

Pimento Cheese

  • Shred 1 lb of sharp cheddar cheese
  • add 8 ounces softened cream cheese, 1 cup diced pimientos, 3 T Rib Rub, 1 t Coleman's mustard powder, 1 t onion powder and mix thoroughly

Note-Rodney Scott's rib rub contains all the usual suspects;brown sugar, salt, pepper, paprika, chili powder, brown sugar, onion powder and cayenne pepper.  He also adds a secret ingredient that he calls, Jesus's Tears (MSG).  I used a rub that I had previously made, but you could use the rub or mix of spices that you prefer.

     The corn Salsa was my own concoction and subject to my limited limited ability to remember what I put into it, but that is the way good cooking goes, right?  A little of this, a little of that and YUM!

Corn Salsa

  • 5 ears of corn, roasted, then kernels removed from cob.
  • 1 roasted, peeled and seeded jalapeno (or to your taste)
  • half a cucumber, chopped
  • half of purple onion, chopped
  • a medium tomato, chopped
  • half a cup of mayonnaise
  • Tajin Classic Seasoning to taste (I used about a tablespoon)

     Mix the mayonnaise and Tajin together and add it to all of the chopped vegetables.  Adjust the seasonings as needed.  Next time, I may try roasting the onions and the tomatoes on the grill too.

     All that was left was to wrap the hot dogs with bacon and grill.

     Oh, some assembly was still required!  Place bacon wrapped dog on toasted bun, then top with pimento cheese and lots of corn salsa.  How about a touch more jalapeno?  Yes please!

     The hot dogs were a hit.  We had to wrap even more hot dogs for round two on the grill.  This was an Independance Day that I could really sink my teeth into.  I hope you had a great celebration as well.
